Moroccan Chicken Casserole

Serves 4 people

Marinade

  • 2 x table spoons Froggit Jalapeno medium chilli sauce
  • 1½ teaspoons cumin powder
  • 2 x whole onions chopped
  • 3 x cloves garlic
  • 4 x tablespoons chopped fresh coriander
  • 4 x tablespoons chopped parsley
  • ½ teaspoon salt
  • 1 x clove
  • ½ cup virgin olive oil
  • 3 x bay leaves
  • ½ preserved lemon sliced and rinsed
  • Pinch of saffron

Method

  1. Place all above ingredients in magi mix and blend
  2. Place paste into bowl and cover to rest

Meat Preparation:

  1. Take 1 x large chicken
  2. Wash chicken, cut off winglets, neck and neck skin
  3. Remove back bone
  4. Cut chicken in half from top to bottom leaving two half chicken pieces
  5. Cut off breasts and cut in half leaving four pieces of breast
  6. Cut off legs and cut off drum sticks
  7. Pat chicken dry and coat with the marinade from the bowl
  8. Making sure it is well covered with the paste place in a bowl
  9. Cling film and refrigerate overnight or at least for two hours

Additional Ingredients

  • 2 x medium firm tomatoes sliced
  • 2 x onions sliced in rings
  • 4 x potatoes peeled and cut into 4 pieces
  • 2 x tomatoes cut into 4 pieces each
  • 2 x onions coarsely chopped
  • 2 x tablespoons of Froggit Moroccan zing
  • 4 x tablespoons of chopped coriander
  • 16 x pitted green olives
  • 1 x cup white wine
  • 1 x whole preserved lemon, cut in 4 pieces and rinsed
  • 2 x table spoon Froggit Habanero hot chilli sauce

Cooking:

  1. In a casserole dish take 4 pieces of potato - coat with marinade and place on the bottom of casserole
  2. Arrange pieces of chicken on top of potatoes along with all the other ingredients, all the time arranging layers of chicken, potato, onions, olives and lemon pieces
  3. Add the wine to the remains of the bowl of marinade and stir, sprinkle the coriander over the liquid, and then pour the wine and coriander over the casserole
  4. In a pre-heated oven to 180°C add the casserole for 45 to 60 minutes
  5. Do not open the lid or stir and allow to cook
  6. Remove and serve

The casserole can be served with spiced rice or couscous and a side dish of Froggit Habanero hot chilli sauce.
